How to make Strawberry Granita/Popsicle
Summer
is almost over & if you have strawberries on hand, you should try
this crowd pleasing recipe. It's an excellent way to use up over ripe
strawberries and indulge in; guilt-free. You can easily turn this into Popsicle's for the kids,
if you like. A low calorie, light & healthy summer treat for all
age groups.
Ingredients
- 1/2 cup hot water
- 1/4 cup or less of sugar
- 1-2 tablespoons fresh lemon juice
- 1.5 cups sliced hulled strawberries
- additional berries and mint leaves for garnish
- Stir first 3 ingredients in small bowl until sugar dissolves.
- Blend strawberries in food processor until smooth. Add sugar syrup and blend until combined.
- Pour mixture into a metal/glass pan. Freeze until icy around edges, using a fork, stir icy portions into middle of pan. Freeze until mixture is frozen, stirring edges into center every 45 minutes.
- Using a fork, scrape granita into flaky crystals. Cover tightly and freeze. (Can be made 1 day ahead. Keep frozen.)
- Scrape granita into bowls. Garnish with berries and serve.
- Alternatively, fill Popsicle containers with granita, refreeze & serve when desired.
